Chocolate Meringue Pie Recipe By Mildred Travis Ingredients: 3/4 cup or 12 table spoons of sugar 5 tablespoons baking cocoa 6 tablespoons cornstarch 1/2 teaspoon salt 1/4 cup or 4 table spoons of milk 2 cups milk 3 egg yolks, beaten 1 teaspoon vanilla extract 1 table spoon of margerine or butter 1 pie shell (9 inches), already baked Directions: In a saucepan, mix sugar, cocoa, cornstarch, salt, and 1/4 cup of milk to start with. Cook and stir over medium-high heat, gradually add the 2 cups of milk until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat. Stir about 1 cup of the hot filling into the egg yolks. Return to saucepan and bring to a gentle boil. Cook and stir 2 minutes. Remove from the heat and stir in vanilla and 1 table spoon of butter. Pour hot filling into pie crust. Bake at 350° for 12-15 minutes or until golden. Meringue Topping for 1 Pie 6 egg whites 8 tablespoons sugar 1 teaspoon vanilla Beat eggs until frothy. Add sugar gradually and continue beating until stiff peaks form. Add vanilla. Pile on pie and bake at 350° for 12-15 minutes.
