Travis Old Fashioned Cornbread Dressing For like 4-5 people, bake 1 can of 10 biscuits and 1 big pan of Cornbread a day ahead of time. For like 6-9 people, bake 2 cans of 10 biscuits and 2 pans of cornbread a day ahead of time. Also if you have some day old light bread, you can add that to bread mixture. 3-4 stalks of celery “washed well” and chop it. 1 big onion, chopped. 2 big eggs. 3-4 tablespoons of butter for sautéing. 2 tablespoons of Poultry seasoning. 1 tablespoon of sage. All the nice fresh Turkey broth from baked Turkey you can save. If you find when your making the dressing that you are not going to have enough of Turkey broth, you need to have on stand by some cans of chicken broth to moisten dressing bread mixtures. Sauté chopped celery, onion in butter. Crumble breads in big mixing bowel with the eggs, add the poultry/sage seasoning, then add the celery, onion and mix with small controlled amounts of broth while mixing mixtures with “clean” hands or what ever, till mixtures are good and moist. Don’t add too much broth at one time, but enough and mix well. You can form into patties, or form into half inch thick layer, on a non-stick with buttered cookie sheet pan for just one big cookie sheet pan of dressing. You can add all mixture to a buttered baking dish but “haven’t tried it that way yet” but have seen people like it more super moist that way, than more thinner crispy pans of dressing, its more like stuffing than dressing. The Travis’s of Jonesville, Virginia like it in 4-5 inch size patties on a baking cookie sheet for crispy patties of dressing.
