Three Pepper Beef Kabobs Prep Time: 15 minutes Cook Time: 8 to 10 minutes Ingredients: 1 pound boneless beef top sirloin steak, cut 1 inch thick 1 medium green, red or yellow bell pepper, cut into 1 inch pieces 8 large mushrooms Marinade and/or Sauce: 2 Tbs. vegetable oil 1 Tbs. fresh lemon juice 1 Tbs. water 2 tsp Dijon-style mustard 1 tsp honey 1/2 tsp dried oregano leaves 1/4 tsp pepper Directions: 1. Cut beef steak into 1-inch pieces. In large bowl, whisk together marinade ingredients; add beef, bell pepper and mushrooms, tossing to coat. Alternately thread pieces of beef, bell pepper and mushrooms on each of four 12-inch metal skewers. 2. Place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 8 to 10 minutes for medium rare to medium doneness, turning occasionally. Season with salt, if desired.
