Oven Fried Fillets 1 pound of your favorite fish fillets 1/4 cup all-purpose flour 1/4 tsp. lemon pepper 1/4 tsp. salt 1 egg white 1/4 cup fine dry breadcrumbs 1/4 cup yellow cornmeal 1 1/2 tsp. lemon peel, finely shredded 1/2 tsp. dried basil, crushed nonstick cooking spray Cut the fish into serving size pieces. Mix flour, lemon pepper, & salt in a shallow dish. Beat egg white until frothy and place into another shallow dish. Mix the breadcrumbs, cornmeal, lemon peel, and basil in a third shallow dish. Dip one side of the fish pieces into the flour mix & shake off the excess. Then dip the same side into the egg white, then the crumb mixture. Place fish, coating side up on a shallow baking dish sprayed with the cooking spray. Bake at 400 degrees for 6-12 minutes or until the fish flakes easily. Then serve them up..
