Sugar Cookies (Do not overbake) 1 cup butter flavored shortening (not butter or margarine) 1 cup granulated sugar 1 egg, beaten 1-1/2 tsp vanilla 2 cups self-rising flour -------------------------------------------------------------------------------- Cream sugar and shortening. Add beaten egg and vanilla, then stir in flour. Mix well. Cover and refrigerate for a couple of hours. Form into small balls (about walnut size) and place on ungreased cookie sheet. Bake at 325 degrees for 10 to 12 minutes until _just_ barely turning brown. DO NOT OVERBAKE (I bake mine for 10 or 11 minutes only). Remove from oven and leave on cookie sheet for 1 minute, then remove to wire rack to cool. Makes about 3 dozen Note: If you don't have self-rising flour on hand, for EACH CUP of self-rising flour use; 1 cup flour 2 tsp baking powder, 1/4 tsp salt. Sift all together 2 or 3 times
