Peanut Butter Crunch Cookies Ingredients : 1 cup firmly packed light brown sugar 3/4 cup (1 1/2 sticks) butter, softened 3/4 cup peanut butter 1/2 cup granulated sugar 2 large eggs 1 teaspoon vanilla extract 2 1/2 cups all-purpose flour 1 teaspoon baking soda 2 cups crisp rice cereal Directions 1. Preheat oven to 375F. Combine brown sugar, butter, peanut butter and granulated sugar in a large bowl. Beat with an electric mixer set on medium-high speed until creamy, 1-2 minutes. Add eggs and vanilla; beat until well blended. 2. Add flour and baking soda to brown sugar mixture; beat on low speed until well combined. Stir in cereal with a spoon. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. 3. Bake cookies until lightly golden, 8-10 minutes. Cool on baking sheets for 1 minute. Remove cookies from baking sheets; cool completely on wire racks.
