Beer Can Chicken Ingredients for the Chicken: 1 whole chicken (4 to 5 lbs.) 3 Tbs. Memphis rub (see accompanying recipe) 1 beer bag of wood chips (for the grill) Ingredients for the Memphis rub: ¼ cup paprika 1 Tbs. brown sugar 1 Tbs. granulated sugar 2 tsp. salt 1 tsp. each of the following: celery salt black pepper dry mustard garlic powder onion powder 1 to 3 Tbs. cayenne pepper (the smaller the amount, the milder the rub) Preparation: Combine the paprika, brown sugar, granulated sugar, salt, and celery salt in a bowl. Then add the black pepper, cayenne pepper, mustard, garlic powder and onion powder. Mix well. Sprinkle and generously pat the Memphis rub onto the chicken, both inside and out. One you open the can of beer, poke two or three more holes in the top of the can to even out the steaming. Pour half the beer out, and use it to soak the wood chips that are to be placed on the coals. Sprinkle some of the rub into the beer can. Lower the chicken onto the can, and place in the center of the grill. Cover the grill, and cook for an hour to an hour and a half. As the chicken cooks, the beer evaporates and makes for a very moist chicken. Yield: 2 to 4 servings
