Vicki's Most Delicious Pumpkin Bread Mix and set aside: 2 1/2 cups flour 2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 small box instant lemon pudding 1 small box instant butterscotch pudding Chopped nuts (optional) Mix well until smooth: 15 oz. can solid pack pumpkin 2 cup sugar 1 1/2 cup oil 5 eggs Preheat oven to 350°F. Grease a small/mini loaf pan (This recipe is just right for 16 small loaves.) Mix dry ingredient mixture into wet ingredient mixture. Pour into pan(s). Bake for approximately 20-25 minutes.
