The Melting Pot Ingredients: 2 pounds ground chuck 1 medium onion, chopped 2 cloves garlic, crushed 2 jalapeno peppers, seeded and chopped 1 1/2 tablespoons chili powder 2 teaspoons oregano 2 teaspoons cumin Olive oil 1 red pepper 1 yellow pepper 2 cans diced tomatoes 1 can kidney beans 1 can hot chili beans Seasoning: Garnish/toppings: Salsa 1 medium onion, chopped 1 yellow pepper, chopped Sour cream 1 red pepper, chopped Shredded cheese 1. In skillet, brown beef and onion in small amount of olive oil. When browned, remove from skillet and rinse in a colander with warm water. 2. Add jalapeno and garlic to food processor (or blender); blend to thick paste. Add water for desired consistency. Add chili powder, cumin and oregano slowly while blending. 3. Put beef back in Dutch oven. Add blended ingredients, peppers, tomatoes and beans. Let cook at low heat for one hour, stirring occasionally. 4. When serving, garnish with toppings
